A yummy delicious traditional mix veg curry with coconut, found in almost all restaurants in Tamilnadu & Kerala – Aviyal. This Aviyal can be taken either with rice or with Adai. Adai & Aviyal is very famous combination in TN.
Servings: 4 Persons
Mustard – ¼ tsp
Curry leaves – 2 sprigs
Coconut Oil – 4 tsp
Curd – 1 cup
Salt – to taste
Carrot – 1no (Chopped to 1cm thickness x 3cm length)
Cluster beans or french beans – 10nos (chopped 3cm length)
Raw Plantain or Potato- ½ (Chopped to 1cm thickness x 3cm length)
Ash Gourd – 1cup (Chopped to 1cm thickness x 3cm length)
Drumstick – 1 (Chopped to 3cm length)
Optional Vegetables: – Brinjal, Yam, Cucumber
To Grind to paste:
– Coconut – grated 1 cup
– Green Chilly – 4 nos
– Jeera – 1tsp
Heat oil in a pan, add mustard, wait till it sputters.
Add all vegetables, saute once. Add 1 cup of water, close with lid & cook the vegetables in medium flame.
When vegetables are cooked, add salt, coconut paste, curd.
Bring to boil.
