Recipe Spotlight

A simple & delicious recipe – Moolai Varuval (Goat Brain Fry), available across all chettinad / military hotels in S.India.

Servings: 4 Persons


Goat Brain – 2nos

Onion – 2 chopped

Ginger – 1 inch, crushed

Garlic – 4 cloves, crushed

Garam Masala / Chicken / Mutton Masala – ½tsp

Chilli Powder – ½ tsp

Curry Leaves – 2 sprigs

Mint leaves – 2 sprigs

Coriander leaves – 2 sprigs, chopped

Turmeric Powder – ¼tsp

Salt – to taste

Oil – 2 tsp


Clean & chop brain softly to lemon size, keep aside.

Heat oil in a pan, fry onions, add mint leaves, crushed ginger & garlic, sauté well.

Add chilli  powder, turmeric powder, garam masala, salt and ½ cup water. Mix well.

Add brain, mix gently, in low flame. Close with a lid.

When cooked, add curry leaves & coriander leaves, Sauté once.


Dole out yummy spicy hot brain fry.
