Brinjals cooked with Garlic cloves & chilli powder, a yummy side dish for Rice & Roti.
Servings: 4 Persons
Garlic Cloves (10nos, skin peeled)
Onion (¼cup, chopped)
Chilli Powder (2tsp)
Coriander Powder (1tsp)
(or home made Sambar powder 3tsp)
Turmeric Powder (¼tsp)
Salt (to taste)
Curry leaves (2 sprigs)
Clean & cut brinjals lengthwise.
Heat oil in a pan, add mustard & Jeera, wait till mustard sputters.
Add Onion & brinjal, chilli powder, coriander powder, turmeric powder and salt.
Add ½ glass of water, reduce the flame, close with lid and cook till soft.
Dole out hot with rice or chapathi.
