Carrots & Beans cooked with Onions & garnished with coconuts, Wow.. a healthy side dish for Chapathi & perfect sidedish for a mid-day meal, in South India.

Carrot (½kg Chopped Small)
French Beans (100gms, chopped finely)
Green Chilly (2 stilted)
for seasoning: Jeera, Mustard & Urud Dal – ½ tsp each
Curry leaves (a sprig)
Onion (Chopped ½ cup)
Coconut (Grated ½ cup or grinded coarsely using mixie)
Salt – to taste
Heat oil in a pan/Kadai, fry mustard seeds, dal, chilly, curry leaves, wait till mustard sputters.
Add onion and fry for a minute in medium flame, in medium flame
Add carrots, beans, salt & sprinkle water.
Lower the flame & cover it with a lid for 10 minutes.
When cooked, add grated coconut & mix well.
