This famous coconut rice can be tasted all over South India, has a different yummy, light taste of coconut.
(V2 – Seasoning with Mustard, Jeera & Chenna Dal)

Servings: 4 Persons

Ingredients

Cooked Rice (4cups)

Coconut (Grated 2 cups)

Cashew nuts (2tsp, chopped)

Green Chilly (8nos- slitted)

Jeera (1tsp)

Mustard Seeds (1tsp)

Chenna dal (2tsp)

Curry Leaves (2 sprigs)

Salt (to taste)

Oil (2tsp)

Method

Cool the prepared cooked rice.

In a thick bottomed pan, heat oil, add Mustard seeds & Saute. Wait till mustard sputters.

Low the flame, Add dal, jeera, green chillies, saute.

Now add the cashew, coconut, curry leaves and salt.

Add rice, mix well.
