Egg Plant / Brinjal / Vangaya / Kathirikai – marinated with chilli powder & pan fried, a yummy sidedish for rice.

Big Brinjal – 2nos.
Home made Kulambu masala – 1½ tsp (or chilli Powder – 1tsp, coriander powder-½tsp)
Oil – 5tsp
Salt – to tatse
Chop Brinjal like wheels, ½cm thickness.
In a bowl, mix chilli powder & salt with sprinkling water, like a paste.
Marinate the chopped brinjal with the above mixture.
Heat oil in a pan, in medium flame, fry the plantain well, both sides.
Dole out yummy hot spicy brinjal fry (Kathiri Varuval), tastes good with Sambar, Rasam & Curd rice.
