Chennai’s Kaalaan – a fast-food available in the streets of Chennai with NO MUSHROOM in it, but named as Kaalaan, In some places its also called as gobi or cauli flower. Find-out below how to prepare in your home, secret revealed 😛
Servings: 4 Persons
Maida – 1cup
Cabbage – 1cup (finely chopped)
Salt – to taste
Oil – to fry
Garam Masala – ½ tsp
Chilli Powder – ½ tsp
Pepper Powder – ½ tsp (freshly grounded)
Curry leaves – 2 sprigs
Besan Powder – 1tsp
Ginger Garlic Paste – 1tsp
Onion – ½cup (chopped finely)
Coriander leaves – 1sprig (Chopped)
Fried Corn – 2cups (Corn Mixture, available in Sweets Shops)
Phase-1: Prepare fried Kaalaan
Mix Maida, Salt, finely chopped cabbage, with water, like a thick idly batter.
(we’re not using colour powder as in street shops, so Orange colcour will not be seen)
Heat oil in a deep pan, fry the above batter like small bondas, keep aside.
Phase-2: Kaalaan Masala
Heat a pan, add 2tsp oil, add ginger garlic paste, saute well.
Mix besan powder in 1½ cup of water .
Add besan water, chilli powder, garam masala powder, little salt, Saute well, in high flame.
When boils, add the fried bondas, Saute well; In 3 minutes, your kaalaan masala is ready.
Add curry leaves, saute once, Remove from flame, serve immediately.
Take a serving plate, 2 scoobs of the above kaalaan masala, top it up with chopped onion & coriander leaves; Sprinkle 3-4 pinches of freshly grounded pepper powder and top it up with Corn Mixture. (as shown in the Foto)
