Malpua – a popular N.Indian pancake served as a dessert or a snack; a crispy soft fluffy pancake dipped in sugar syrup and mostly served with rabri. I learnt this recipe in Kolkatta, from a street vendor.

Servings: 4 Persons

Ingredients

Maida (¼cup)

Rava (2tsp)

Milk (3 cups)

Cradomom (3nos, crushed)

Ghee / Dalda (¼cup)

Sugar (1 cup)

Grated Pista, badam, cashew for garnishing.

Method

Boil milk in low flame till the 3 cups becomes 1½ cups, stirring continously. Keep aside & cool it.

Mix Maida, Rava , Milk into batter consistency.

Fry in a pan using Dalda/Ghee (like dosa, fry both sides).

Heat another pan, add sugar, cardomom & ¼cup water. Prepare Sugar syrup.

Dip the fried pancake in Sugar Syrup.
