Phirni (Rice Kheer)

Kheer / Payasam prepared with Bhasmathi rice and milk, a yummy Punjabi recipe.

Servings: 4 Persons

Bhasmathi Rice – ¾ cup

Milk – 1 litre

Sugar – ½cup or condensed milk -½cup

Salt – a pinch

For Garnishing:

– Cashew – ¼cup

– Raisins – 2tsp

– Elachi – 3nos

– Ghee – 4tsp


Pressure cook basmathi rice, with milk.

When ready, smash the rice, Keep aside.

Boil the rice once again in low flame, add a pinch of salt & sugar or condensed milk, stir continuously, till the milk becomes thick.

Heat ghee in a pan, fry cashew, cardomom & raisins, add it to the rice kheer.


Dole out yummy hot Phirni, a yummy Rice Kheer.
