Brinjal Rice / Vangi Baath is karnataka’s popular dish. When I was very young, my neighbouring aunty introduced me this recipe. Instead of brinjal, you can try with your choice of vegetable :  carrot / potato / french beans / onion / cabbage.

Servings: 4 Persons

Ingredients

Brinjal – 4 nos – Chopped

Home made Bedaga Masala – 4 tsp (Click here for recipe)

Rice – 3 cups (Click here for recipe)

Curry leaves – 2 sprigs

Oil – 4 tsp

Salt – to taste

Method

Heat oil in a pan, fry brinjal in medium flame, till cooked.

Add curry leaves, masala powder & salt. Mix well.

Mix cooked rice.

Servings

Dole out yummy hot Brinjal Rice, with papad / appalam / poriyal.
