This delightful rice dish is cooked with mix vegetables of your choice in a thick bottomed vessel so as to absorb the richness flavour of the Vegetables and spices. hmm.. Spicy Yummy Vegetable Biriyani!!

Servings: 4 Persons


Basmati Rice (2cups)
Carrot (chopped like wheel – ½ cup)
Beans (chopped lengthwise – ½ cup)
Potato (chopped – ½ cup)
Cauliflower (chopped – ½ cup)
Fresh Green Peas ( ½ cup)
Onion (2nos – Chopped)
Tomato (2nos – Chopped)
Green Chilly (Slit 4nos)
Cinnamon (4nos)
Cloves (4nos)
Cardamom (4nos)
Bay leaf (4nos)
Ginger Garlic paste (3tsp)
Turmeric Powder (1tsp)
Chilly Powder (2tsp)
Coriander Powder (1tsp)
Mint leaves (10sprigs)
Coriander leaves (4sprigs)
Salt (to taste)
Oil 1 cup
Ghee 1/2 cup
Garnishing: Bread chopped 1 inch size


In a thick bottomed pan, heat oil, add Cardamom, Cinnamon, Cloves, Bay leaves, Chillies and Onion. Stir till onion becomes golden brown color in low flame.

Add Curry leaves, mint leaves, ginger-garlic paste and fry for 5 minutes. Add vegetables, Chilly powder, coriander powder, turmeric powder and stir for a while.

Now add 4cups of water, coriander leaves and salt. Let it boil.

In the mean time, wash the rice and keep aside.

Using electric cooker: Pour the gravy and spread the rice. Add Ghee after 10 minutes.

Dum Biriyani Style: Heat a thick vessel/ Pressure Cooker, Pour the gravy and spread the rice, in low flame, change the position of the cooker/vessel every 3 minutes. Add Ghee after 10 minutes. Switch off the fire, after 5 minutes.

Garnishing: Fry the Bread in Oil/Ghee till golden Crisp. Mix it in Biriyani, while Serving.
